How about the white stuff? Edible? Will it disappear after it is matured?

Usually it will disappear after it is matured. If it is still there and it is white in colour,it is safe to consume the enzyme drink. I guess no harm eating the white staff if you want to know (tell us after that)what it tastes like. If black mould appears, the whole thing is already contaminated. You know what to do with it, pour them away is the only thing you have to do.
Put the jar/container under hot sun for few hours and try again.

I checked the enzyme book on this layer of white stuff,it's the "biofilm". I supposed it's the good bacteria's "dropping".hehehe.:p
I've learned something again- Good stuff is always white and harmless, bad stuff on the other hand is usually black and harmful. Looks like God has fixed this rule of nature.
Of course there is exception- like Bao Gong, black faced but righteous!
